A Girls' Day: Toes - Shopping - Food!

My Heart is off to HealthFoo (A Foo Camp dedicated to conversations around Health Care) in Boston… my son's girlfriend starts her internship on Monday and needs some professional clothes and my daughter was off so a "Girls' Day" seemed appropriate.

We started with pedicures at our local nail salon - Pink for me… blue/gray for Shannon… and red for my daughter, Angela

Then lunch at our local All You Care To Eat Chinese / Hibachi Grill restaurant.  
I really like this place but obviously don't go often… just not a good health choice.

Although… they do have good, fresh sushi, which isn't too bad health-wise.  And they have a hibachi grill station, where
you can pick your ingredients including tons of fresh vegetables and they "stir-fry" it in front of you.  HAD to share our
"fortunes" and Shannon's was the BEST (the one on the bottom).. Ooops.. Typo !

Then off to Arundel Mills Mall for some shopping: first stop - The LOFT … a pretty pink shell and black cardigan for Shannon
and a purple dress and purple cardigan for me.  Next, Lane Bryant.. a swim suit for each of the girls, a couple skies & tops for
me and a top for Angela

My actual goal was to get shoes.. with only limited success: the sandals on the right for me.. the fun Bow'd sandals in the
center for Shannon and… well, I HAD to get the pumps - they were just too cute.  Next - The Limited: Purple striped button-down
for Shannon, pretty purplish-blue shell for me, and a beautiful and well-fitted color block (black on the sides with a white panel in 
the middle) pencil skirt for Angela

Deal of the day?  From the GAP - vivid orange cardigan for Shannon and bright blue cardigan for Angela… Cost: FREE!!!
I had a coupon that covered the cost of Both..!!  Yeah!!

Finally, after all that walking (for about 6-hours) and shopping, we needed to grab a bite to eat - Denny's.. not gourmet but
pretty darned satisfying!  Bacon, eggs & hash browns for me and an bacon avocado burrito (which included scrambled 
eggs) & hash browns for the girls… Also pancakes!   

Very successful trip and lots of fun !!

Now for dinner!  My son's girlfriend, Shannon,  and my son cooked up my favorite Korean feast including chap chae, which has glass noodles so it is gluten-free and lots of vegetables..

Fresh Kim Chee - traditionally kim chee is aged and fermented but it can also be made Fresh and this was the FIRST Time that Shannon ever made this (and the Chap Chae) - it was delicious!

This dinner turned out close to what I hoped - super simple but very satisfying and filling

Browned ground beef combined with fat-free refried beans and fresh, store-bought, spicy pico de gallo

We bought this seasoning (JD's Salsa in Seconds) at the Sugarloaf craft festival - definitely the Best buy of the day - very versatile. It can be combined with a can of chopped tomatoes for salsa but can also be combined with sour cream for a creamy "salsa" topping

The company's recipe recommends mixing with sour cream and mayonnaise but we just used low fat sour cream and it worked fine

It has "heat" but is also a lovely foil to really spicy pico de gallo

Sunday Roast: Kaytucky Chicken & Pistachio Napoleans

Life has been crazy, as you will see if you follow my blog and I try very hard to Catch Up.  This was the last Sunday Roast I cooked on April 29 - This was very popular dinner and definitely a do-again: Kaytucky Chicken … And I basically followed the recipe too!

Stuffing: Cream Cheese, chopped green onions, bacon, and flat-leaf parsley combined and made into little balls

Cut a "pocket" in the Chicken breasts and stuffed each one with a ball of the creamed cheese mixture

Then wrapped each breast in defrosted pieces puff pastry

then "painted" each packet with beaten egg before placing in a 400-degree oven for 40-minutes

There were extra bits of puff pastry which soon became part of my Heart's dessert creation - baked with the same egg wash

Vegetable side: succotash = corn, baby lima beans, red bell peppers with just a touch of butter

Red "hot" pepper for a little heat but this wasn't very hot - will try something different next time

Sliced firm tofu - pressed as much liquid out as I could without squashing the tofu

As the vegetables were cooking, grilled the tofu

Plated with Asian short-grain rice - a drizzle of gyoza sauce on the tofu - the vegetables had a nice sweetness.  Interesting part?  My Heart didn't like the tofu at all - next time might cut the tofu into cubes and Add it into the vegetables so it is coated in the sauce…  the Vegetables were a "hit".  Just goes to show… not Every meal is a success!

Tilapia Gyros-style

The inspiration for this recipe was a Chicken Gyros recipe… initially I was going to do the chicken gyros-style but serve it with rice and the Tzatsiki sauce but then I decided to try it on Tilapia - my mistake was that I had to go back to work so I rushed things… Bad Plan!

The marinade was very easy

Relatively finely chopped hot house cucumber - I actually like my Tzatziki sorta chunky so this wasn't just laziness.  My Error?  I was rushing, which is always a BAD plan… I put the marinated fish in to cook and then proceeded to mix the sauce for the Tzatziki in the SAME Bowl… at least I realized what I had done BEFORE I added in the vegetables!  Wasted the Tzatziki sauce ingredients though - so sad!

So I took the chopped cucumber and also added the chopped tomatoes (which I had planned on adding to the rice) and combined it with this wonderful Garlic Basil Parmesan Dipping oil - it made a great salad dressing

The baked Gyros-style Tilapia plated with long-grain rice cooked with toasted pine nuts and the cucumber & tomato salad - next time I definitely want to do the Tzatziki sauce and actually take time to eat this dinner properly and not leftover.  Yum!

Sunday Roast: Maple-Pecan Crusted Pork with fixings & Ginger Stack dessert

The inspiration for this Sunday Roast was Maple-Pecan Crusted Chicken but I really thought it sounded better for pork and - voila - pork tenderloin was on sale.

Pork tenderloin crusted with chopped pecans and panko mixed with real maple syrup and freshly ground pepper - I meant to use the mayonnaise but totally forgot… I don't think it is necessary.

Pork roasted at 350-degrees for approximately 60-minutes until the internal temp reached 140-degrees - rested for 15 minutes before carving.

Fresh asparagus spears covered with water, brought to a hard boil and then removed from heat and let sit for 5-minutes before draining.  Returned the skillet to med-high heat and pan roasted the asparagus with a touch of olive oil and finished with a sprinkling of Montreal Steak seasoning

Plated with fresh made mashed potatoes and my Heart's brown gravy - the crust was delicious and pork moist and tender. My Heart used some finely chopped pecans and a little maple syrup, along with the usual Bisto & red wine, for the gravy so there was a similar sweetness.

Dessert was scrumptious. Anna's Cookies: Ginger Things layered with Bailey's Whipped Cream (heavy cream whipped with Bailey's Irish Cream liqueur)  topped with a chocolate covered espresso bean and finely chopped candied ginger.  Surprisingly light and a huge hit!!

  • an introduction to a process where you can utilize more of your potential to create more satisfaction and success for yourself
  • an understanding of what a "good experience" is as it relates to revealing patterns of strength

    • Form groups of 4 - quickly

WOW - I can do anything… the stories are different but the results are the same because they finished / dependable strengths are patterns of strengths that you had at very early age… the name may differ but it existed (example: doing these rock operas as a kid became presenting and teaching in the future / write down your best experience of the day
    • Did it sound like your partner was bragging or boasting?  NO - did you want to get to know more about the people at your table?  YES
  • How is a Dependable Strength Different from any other Skill?
    • we are internally motivated to use - almost can't help using it - 
    • with more education and training - the outcomes are more ingrained on how we apply it and the benefits are longer term
    • There are things that we do really well but we don't Enjoy doing them - Just to using those can cause burnout (unmotivated strengths) 
    • Also learning about the dependable strengths of other members of your team
  • Points about Dependable Strengths
    • A Dependable Strength would typically show up repeatedly throughout your top Good Experiences
    • You are energized by it
    • You are inner motivated to use it
    • You almost cannot help using it whenever possible.
  • Additional Comments
    • Accept yourself as unique in the kind of excellence always growing in you
    • elements of your excellence had been demonstrated from time to time in your life most likely in experiences you feel are your achievements
    • be carefully identifying and studying your achievements you will uncover a pattern of strengths and talents
