I think of
ramen as a real comfort food.. warm, satisfying… yummy. But I sometimes feel guilty because my Heart is sorta stuck eating ramen fairly often in the winter so I like to "switch it up" a little. In Japan, ramen is frequently regional with flavors / types including a miso ramen up north in Sapporo and in Tokyo a more traditional soy-flavored chicken broth ramen (shoyu ramen). In Yokosuka, where we lived from 1980-1983, you could get a curry ramen - which is where this idea came from.
Santa gave me the Thai yellow curry sauce in my stocking… after tasting it, it has a lovely light curry flavor with a little touch of sweetness, I decided it would be good in this dish but wanted a little more "heat" - the Madras curry paste would take care of that while maintaining the curry flavor vs. something like sriracha sauce
In the bottom of the bowl - baby spinach
Low fat / low sodium chicken broth with 3/4-1c of the Thai yellow curry sauce and 1/2Tbsp of the Madras curry paste - simmered together for 20-25 minutes
Cooked ramen noodles drained
A heaping scoop of bubbling broth to wilt the spinach...
,,topped with the ramen noodles and then some shredded cooked chicken (I keep some picked store-rotisserie chicken in the freezer for instances like this)...
.. topped with more broth. It was delicious - very hearty and just enough "heat" to get your attention. YUM!
Fish Monday: Cold, wet Monday.. really glad I put this Salmon Chowder on the menu - original recipe from

Sauteed chopped carrots and celery - next 4c low sodium / low fat chicken broth, 1c water
added in chopped green onions and defrosted cauliflower florets, also chopped - simmered 10 minutes
Potato flakes used as thickener - a great idea … made it thicker and "creamier" while adding Zero fat - Added in 1 1/3c potato flakes, mixed in thoroughly with some dried tarragon
The recipe called for raw salmon cooked in the soup - we decided on smoked salmon
Very luscious salmon was flaked and added to the thickened soup
Final touch - freshly grated pepper
and on the side, a couple cheese quesadillas using corn tortillas
Very satisfying on a cold evening - the smoked salmon worked perfectly and added a nice smokey flavor to the chowder. I think I might add corn next time
This was a pretty good week - stuck to my menu… well, close!

Zuppa Toscana - seemed like a good choice. Dessert: Rice Krispy cupcakes (pic at the top of the blog) - loved the soup and it wasn't bad leftover so made for good lunches too.

Friday, Jan 20 was spent up on the slopes, skiing with my daughter and son's girlfriend - that's my daughter, heading down the hill to my Heart who teaches part-time at the resort.
Unfortunately I came down with a cold so I didn't get a chance to go skiing on Saturday - comfort food lunch? Yakisoba topped with fried eggs.. works for me
Saturday, Jan 21 - Dinner for my Heart after a day of skiing: tortellini casserole with tomato paste mixed with pesto and topped with shredded mozzarella and Mexican blend cheese baked for 25 minutes until hot and bubbly
This week's Sunday Roast was also my Heart's birthday dinner - his choice: pork tenderloin with apples & a good grainy Dijon mustard, roasted vegetables (red potatoes, parsnips, and carrots), homemade applesauce
Sliced open two tenderloins, not all the way through
… filled with grainy Dijon mustard and Macintosh apple slices
.. tied up and coated with some more Dijon mustard and a little olive oil
Vegetables were tossed with olive oil and Herbs de Province
Homemade applesauce: three granny smith apples & two red delicious - a little water & a little rum / brown sugar / allspice / cloves - brought to a boil and simmered for 30 minutes
Tenderloin roasted for 50 minutes at 375-degrees
Vegetables roasted with the tenderloin and then continued to roast for an additional 20 minutes at 425-degrees while the tenderloin "rested"
Gravy: one package dry pork gravy mix, 3/4c water, 1/2c Merlot, heaping scoop of grainy Dijon mustard, splash of Worcestershire sauce, and freshly ground pepper
All served up - YUM!
Another quick dinner because I have a 7pm everything Thursday and my Heart is coming back from an event in DC. Bought a package of English muffins so … eggs benedict seems appropriate and decided to make it marginally healthier by adding spinach: Eggs Benedict Florentine
I LOVE these little egg pods - they are easy to use and very easy to wash BUT.. because I don't use them that often I Always forget - Put The Pod in a little glass bowl to "hold" it when you drop the egg in it because I ALWAYS lose the first egg into the sink. Just a little olive oil on a paper towel wiped around the pod is enough to "grease" it
Bring about 1 1/2" of water to a full boil and then drop to a steady simmer and lower the pods onto the water and cover - cook for 4-6 minutes depending on how hard you want the eggs
Toasted English muffins topped with wilted fresh spinach. I think I found a way to squeeze the water out of the spinach that works - fresh spinach in a colander, poured over a full kettle of boiling water. Let the water drain out and then took the wet spinach and put it in a small towel and twisted the towel… it is fairly easy to twist the towel and definitely worked better than trying to wring out the spinach by hand
Topped with some Hollandaise sauce - and I totally cheated for the Hollandaise and used a package. I know I should make it from scratch but I am on a time frame here and don't have time to finesse the sauce or have it not turn out

And finished with more Hollandaise and some freshly ground pepper. The eggs were perfect, the whites cooked and the yolks lovely and runny … I would have taken a picture but we were starving.. YUM!!
It was a cold, blustery day and this is a great bit of comfort food that carries a bit of heat
Saute cubed green & red pepper, onion, ham steak, freshly crushed garlic, and a chopped jalapeño
Next: thyme and tarragon and a large can of chopped tomatoes, liquid included and about 1/2c merlot - simmer 30 minutes
Add in a handful of defrosted shrimp
And simmer for another 20 minutes while the long grain rice cooks
My Heart likes a little of the broth..
but I like mine soupier and we both like hot sauce added. YUM!
We went to the
Iron Bridge Wine Company to celebrate our 4th Anniversary and my Heart's birthday - I remembered to take pictures of most things but everything was delicious so… well, you'll see!
Started with a lovely bottle of Proseco - also had a bottle of Pinot Noir but totally forgot to take a picture.
Starter - my Heart had the Tuna Tartar (nope - no pic) and I had the House Made Charcuterie plate which included Speck Ham, Chicken Liver Rillette, Pork Pate, pickled vegetables and toasted baguette. I obviously snarfed everything down but did manage to remember to take a picture of some of the remains… the Chicken Liver Rillette and the Pork Pate - It was all wonderful
My Heart's dinner: Filet topped with a lobster butter, potato puree and haricots verts
My entree: Sirloin topped with garlic butter, garlic potato puree, and spinach
My Heart's lovely Pecan Tart topped with vanilla bean ice cream and a Birthday Candle
… and at the bottom of the creme brûlée was a layer of chocolate granache - really amazing. It was a lovely dinner - a great way to celebrate!
This seemed like a good idea for a quick dinner - definitely fit the bill
Four eggs scrambled and added a scoop of the chive cream cheese for seasoning and to add some richness to the eggs

…finished with the scrambled eggs and some freshly ground pepper - really simple but delicious and very satisfying after a day of skiing. Next time I think I will do something closer to an Eggs Benedict with a poached egg topped with hollandaise

Olive Garden's Zuppa Toscana and it was very good. My Heart has a cold so I wanted something warm, homey, and real comfort food… this soup fit the bill
Ground hot Italian sausage and crumbled bacon, browned
Chopped onions and garlic next and then cubed russet potato - added chicken broth and let everything simmer for about 20-minutes until the potatoes were cooked through
Chopped kale was added and then heavy cream and simmered a bit longer - served up with a hearty sprinkling of freshly grated parmesan
The soup was a hit with everyone… delicious. Next time we are thinking less Italian sausage and more bacon!

Cupcake Pebbles Treats - I didn't use "Pebbles" cereal.. used Rice Crispies instead
Topped with ready-made Dark Chocolate fudge frosting and glittery sprinkles. They were a great treat since I love rice crispy treats and cupcakes but don't generally eat cupcakes any more… although I think my kids would argue that I just eat cupcakes for the frosting! YUM!
